Ingredients:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 2 tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup boiling water
Instructions:
1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing them with butter and dusting with flour.
2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
3. Add the buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients and mix until well combined, using a hand mixer or stand mixer on medium speed.
4. Gradually stir in the boiling water, mixing until the batter is smooth and well combined.
5. Pour the batter into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
6. Allow the cakes to cool completely in the pans before removing them and transferring them to a wire rack.
7. Once the cakes are completely cooled, you can frost them with your favorite frosting and decorate as desired.
Additional tips:
- For an extra rich and chocolatey flavor, you can add ½ cup of chocolate chips to the batter before baking.
- If you don't have buttermilk, you can make your own by adding 1 tablespoon of white vinegar or lemon juice to 1 cup of milk and letting it sit for 5 minutes until it thickens and curdles.
- To make sure your cakes come out evenly, you can use a kitchen scale to weigh the batter and divide it evenly between the two pans.
- For the frosting, you can use a classic chocolate buttercream, cream cheese frosting, or whipped ganache. You can also top the cake with fresh berries, chocolate shavings, or chopped nuts for added texture and flavor.
